This is a mild curry. For a stronger curry, adjust the amount of curry powder. Adding the cream or coconut milk near the end will make a milder, creamier curry.

Chicken

STIR-FRY

SERVES 6

500 g skinned deboned chicken breasts

125 ml cake flour

10 ml salt

45 ml canola oil

1 onion, sliced

4 cloves garlic, roughly chopped

5 ml chopped or grated fresh ginger

1 small green pepper, deseeded and julienned

1 small red pepper, deseeded and julienned

200 g carrots, peeled and julienned

200 g small baby marrows, julienned

100 g button mushrooms, sliced

freshly ground black pepper to taste

30 ml cake flour

10 ml chicken stock powder

625 ml water

15 ml dark soy sauce

15 ml honey

1.25 ml sesame oil
